APPLE CRANBERRY WALNUT SALAD WITH BALSAMIC VINAIGRETTE

Whether you’re looking for a quick autumn inspired meal, or are trying to figure out what to do with the bags of apples in your fridge from this year’s trip to the orchard, this Apple Walnut Salad with Balsamic Vinaigrette is a must-try recipe. Made with a few staple ingredients (and yes, in my house feta cheese IS a staple), this salad is paired with a deliciously tangy sweet homemade dressing and is on heavy rotation in my weekly menu planning. It’s basically fall in a bowl. Bon appétit!

 

INGREDIENTS

8 cups lettuce (I used a combination of romain and spring mix)

1 medium apple, cored and sliced (I used a Fuji apple)

1/4 thinly sliced red onion

3/4 cup of walnuts

1 handful of dried cranberries

salt and pepper

 

VINAIGRETTE

1/3 cup extra virgin olive oil

2 TBSP balsamic vinegar

1 TBSP dijon or spicy brown mustard mustard

2 tsp. honey

 

DIRECTIONS

In a small bowl, combine the olive oil, balsamic, dijon and honey. Whisk until thoroughly blended. Set aside.

In a large bowl, combine all salad ingredients except for feta cheese. Drizzle with the previously mixed vinaigrette and toss. Sprinkle feta on top and add salt and pepper to taste.

 

PRO TIPS

Not a fan of feta? Substitute with goat or blue cheese.

Making a big batch for the week ahead? Add the dressing right before serving to avoid sogginess.
