A few months ago, I made the decision to jump on the Whole30 bandwagon. For those of you who don’t know, Whole30 is not so much a diet as a program: one that eliminates the most common craving-inducing, blood sugar disrupting, gut-damaging, inflammatory food groups (aka “the fun stuff”) for a full 30 days. The idea is to take a step back and examine how the foods you’ve been eating actually affect your daily life and to negate the negative effects of the food choices you’ve been making. If you have low energy levels, chronic pain, migraines, digestive issues, etc., the odds are these symptoms are directly related to the food you eat… even the “healthy stuff.” Think of Whole30 as pushing a reset button. A giant, life changing reset button.

Dairy? Bye bye. Sugar? Nope. Grains? Absolutely not. Legumes? Forget about it. Alcohol? Heck no.

Yes, I realize this sounds terrible. And yes, I realize this sounds a little cult-y. And while I plan to spare you the gory details and reasons behind my decision to get and stay on board with this lifestyle (you’re welcome), I will tell you that some of the recipes I’ve come across in the last few months have been REALLY. FREAKIN’. GOOD. Like, you don’t realize you’ve eliminated things out of your diet good. Like “I scream, you scream, we all scream for ice cream” good.

Enter this banana faux ice cream (fuaxcream?). Yes, you are technically not supposed to have dessert whilst on Whole30. But it’s not dessert. Its frozen banana, coconut milk, cinnamon, and almond butter that blend into a heavenly bowl of something that resembles a dessert. (Tell yourself what you have to, folks. This ish is worth it.)

 

Ingredients

1 banana, frozen

1 TBSP coconut milk

1 TBSP almond butter

Dash of cinnamon

Directions

Peel a banana, put in a ziplock bag, and place it in the freezer overnight.

Chop frozen banana and place into a food processor.

Add coconut milk, almond butter, and cinnamon.

Mix until creamy.

Top with your favorite healthy topping (I personally love coconut flakes and raw cacao nibs).. and enjoy!
